Brian Maule was Head Chef at the Michelin Star London restaurant, Le Gavroche. Earlier last year with
full backing of the Roux dynasty Brian has fulfilled his lifelong ambition
opening his own restaurant in Glasgow.
With a masterful combination of traditional French techniques and textures Brian
uses the very best of Scottish produce to create dishes of a standard most chefs
can only dream about.
Indicative menu: Tartlet of Arran smoked salmon with herb cream cheese.
